Ordering is done from memory, at the worst hour of the day, by someone who is also doing three other things. What arrives is roughly right, the invoice is roughly checked, and the price that quietly went up in March is found in October.

What it actually does
- Builds the order from what is actually on the shelf and what the coming week looks like, not from memory.
- Keeps every purchase price with the date it applied, so a rise is visible the day it happens.
- Checks the delivery against the order and flags the difference before the invoice is paid.
- Sends the order to each supplier the way that supplier actually takes them.
The detail that matters
Price history is the quiet part that pays for the rest. Without it, the cost of a dish is whatever you last remember paying — so margin is a guess and every calculation built on it is a guess too. With it, butter going up eleven percent lands on every recipe that contains butter, the same day, down to the portion.
What it does not do
- It does not choose your suppliers, and it will never order from someone because they are cheaper on paper.
- It does not yet compare prices across several suppliers for the same item — that needs more than one supplier per item, which is the next step, not today's.
